Tastes – Onion-Ham Canapes

My son Matt and I came up with this spread one cold night with extras from a pot of ham and bean stew.

Onion-Ham Canapes

Ingredients:
1 plus cup finely chopped ham or use processor
1/4 cup celery finely chopped
1/4 plus cup onion finely chopped
1/4 cup mayo
Touch of mustard to taste
3-4 tablespoons sweet pickle relish
This is the secret ingredient Pepper ( Salt? Ham is salty).

Directions:

  • Place chopped ham, celery, onion, mayo, mustard, and relish, salt and pepper in a bowl.
  • Mix well.
  • Serve on crackers or small, round pumpernickel bread or toast.

Tip: Just as good the next day as a snack or ham salad sandwich.

Tastes – Guacamole

When I was lucky enough to have my own Avocado Trees in Santa Barbara I made guacamole nearly every day. It is the “good fat” I told myself.

The owner shared this version of guacamole when I brought him my basket of avocados and limes. There is a similar recipe in Bon Appetit.

Guacamole

For 1 cup – 1 person ( or two unless I am sharing)
Ingredients:

1 large, ripe avocado, pitted and peeled
1/2 cup each of fresh cilantro and onion, both chopped
2 large garlic cloves, finely chopped
2 Serrano chilies, chopped and seeded
Salt and pepper
2 squeezes of fresh lime juice

Directions:

  • The Superica cooks mash the avocados and lime in a bowl.
  • Then add the rest of the ingredients.
  • Mix to a rough chop.
  • Serve with freshly made or toasted, crisp Tortilla chips

Tip: Serrano chilies are small, green and hot! Use with care. If chopping onions makes you cry do not touch your eyes with your hands.

    Tastes – Blue Cheese Comfort Bites

    My mother served these simple blue bites as appetizers at our New England Saturday night suppers in the days of yore. I will not reveal when that was. Mom let me help her make them (very easy) and serve.

    Blue Cheese Comfort BitesMakes 40 – they go fast on a winter eve.
    Ingredients:1 can (10 biscuits) refrigerated biscuits
    1/2 cup butter (one could use margarine)
    3 tablespoons crumbled blue cheese. (We love the Oregon blue cheese best)

    Directions:

    • Remove biscuits from package and separate onto a large greased or sprayed baking pan.
      In a small pan (or carefully in the microwave) simmer the butter and blue cheese until melted, stirring when necessary.
    • Pour over biscuit pre-cut pieces.
    • Pre-heat oven, (375-400)
    • Bake until done. Perhaps 10-12 minutes. They will be a golden, honey color.
    • Serve at once on a tray on a white linen cloth napkin or towel.

    My parents drank those delicious 1940s cocktails, old fashions, Tom Collins, martinis and Manhattans.

    However, these blue cheese bites work best with an icy, cold beer or ale. Lemonade for the wee ones.

    This simple recipe is great for impromptu guests as the ingredients are often found in the fridge.
