Michelin Guide Announced Starred Restaurants for 2011

The talk in Paris and New York this week has been about the new 2011 Michelin guide. According to the food blog, Paris by Mouth, for the first time since 1992, there are no new three-star restaurants in France. The New York Times Diner’s Journal expresses it well: “In France, Michelin dims its galaxy of three-star restaurants.”

Michelin equates this to the shift towards value-oriented, bistro eating instead of the white tablecloths and silver service in the Michelin-starred world of haute gastronomy. Eater indicates that the new guide has more Bib Gourmand restaurants. These establishments focuses on a full meal that costs less than €35 (US$48) in Paris and €29 (US$40) in the rest of France.

New two-star restaurants in the guide include: Jean-François Piège at L’Hôtel Thoumieux (currently appearing on the French version of “Top Chef,” Jean-François Piège used to helm Les Ambassadeurs at Le Crillon); L’Atelier de Joël Robuchon-Étoile, and Passage 53, formerly decorated with one star.

Having dined at Robuchon’s in Las Vegas, it is easy to understand the Michelin Ratings. I’ve been fortunate to dine at 1, 2, and 3 Michelin star restaurants. They have all been a wonderful experience and taking part in such creativity, skill, service, and culinary talent provides unforgettable experiences.

My personal observation based on the U.S., attending Sirha and Bocuse d’Or in France, and just returning from Australia, is the one and two star as well as those just under the star rating that provide delicious, well-prepared, fresh food, will continue to grow and dominate the market. Naturally, I also feel the economy plays into this change.

On a recent trip to Lyon, Brenda and I had the pleasure of having two meals in 2 Michelin star establishments in two days. As much as we enjoyed both of them, and we thoroughly did, the next night in the little bouchon was equally as enjoyable with different expectations. There is room for every level of dining.

Bocuse d’Or Winner is Rasmus KOFOED – Denmark

Bocuse d’Or: Rasmus KOFOED, representing DENMARK, has won the Bocuse d’Or 2011 trophy and €20,000 in prize money.

Second place, Bocuse d’argent : Tommy MYLLYMÄKI, representingSWEDEN, won the Bocuse d’argent trophy 2011 and €15,000 in prize money.

Third place, Bocuse de Bronze: Gunnar HVARNES, representing NORWAY, won the Bocuse de Bronze trophy 2011 and €10,000 in prize money.

Several special prizes were also awarded:

- Prize for the ‘Best Commis’, awarded by the Bocuse d’Or Winner’s Academy: Kinari KOYAMA, Commis to Tatsuo NAKASU, JAPAN

- Special ‘Fish’ prize: Franck GIOVANNINI, SWITZERLAND

- Special ‘Meat’ prize: Jérôme JAEGLE, FRANCE

- Prize for the best promotional campaign: GUATEMALA

- Prize for the best Poster, as selected by visitors via the internet website: SPAIN

As part of the Sirha 2011 trade exhibition, performing in dedicated contest kitchens facing the public at the heart of the brand new Paul Bocuse hall, 24 chefs from all regions of the planet took up a major challenge: that of preparing within 5.35 hours, during an extraordinary show, two perfect dishes using the official products of the Bocuse d’Or 2011: Scottish lamb for the meat dish and Monkfish, Crab and Scottish Langoustine for the fish dish.

To judge the 24 candidates, the jury was composed of 24 influential chefs who are emblematic of each country represented, under the aegis of 3 exceptional presidents: Paul Bocuse, President Founder,Yannick Alleno, Honorary President (3* Chef at the Meurice, Silver Bocuse 1999) and Geir Skeie, President of the International Jury (Bocuse d’Or 2009).

The 12th World Pastry Cup has been won by SPAIN.

BORDAS SANTACREU, Josep Maria GUEROLA and Julien ALVAREZ were presented with the trophy created by Antoine Arnaud, the Gold Medal, and also € 12 000 in prize money.

ITALY achieved the second place. Davide COMASCHI, Domenico LONGO and Emmanuele FORCONE won the Silver Medal and also € 7 000 in prize money.

BELGIUM achieved the third place. Dieter CHARELS, Marijns COERTENS and Pascal DE DEYNE won the Bronze Medal and also € 4 000 in prize money.

Each team, composed of a pastry chef, a chocolate specialist and an ice-cream maker, had 10 hours in which to create:

Three chocolate desserts, three frozen fruits desserts, twelve desserts on a plate, representative of the traditions and latest trends of the represented country, also an artistic creation made from sugar, an artistic creation made from chocolate and an artistic creation sculpted from hydric ice.

In order to adapt to the popularity of the contest, the event was staged for the time in the brand new Paul Bocuse hall.

As well as the candidates, the jury members were also the stars of this contest. The jury was composed of judges from the 19 participating countries, and was be presided over by Jérôme De Oliveira, leader of the team that won the previous edition in 2009. Gabriel Paillasson, President Founder and Pascal Molines, President of the International Organising Committee had invited pastry chefs Mitsuo Hara and Kazuaki Takaï, true representatives of Japanese pastry to be the Honorary Presidents of the event.
