Muddled Margaritas

I am perfecting my Cinco de Mayo recipes for early May. As avocado fans, our team enjoys the recipes we try from the Haas Avocado Board. I have written several margarita recipes for our blogs. My version of this one has a new twist since it contains avocado. It is the ideal pairing with guacamole, chips and salsa, tortilla soup, and California style fish tacos.

Ingredients for one serving:

Margarita salt for rim as needed

1/2 sour mix

1/2 simple syrup

1/4 fresh lime

1/8 of fresh, large, ripe avocado

1 1/2 oz tequila

1/2 oz orange liquor

1/2 oz or a few splashes of orange juice to taste

ice cubes

Method:

Rim margarita glass with salt.

Place avocado and lime wedge in a pint glass and muddle well.

Add sour mix.

Add tequila, orange liquor and orange juice.

Add ice and shake vigorously until frothy.

Pour into salt rimmed glass.

Tips:

Use all fresh ingredients and the best tequila, when possible. You will taste the difference.

Optional garnishes are lime wedge, orange wheel or an avocado slice.

Grapefruit Cocktail

In celebration of Earth week I came up with a simple spring refresher cocktail for a neighborhood sunset soiree.

Since I grow a few grapefruit trees and usually have gin on hand, I simply mixed 1 part of fresh squeezed juice with one part gin. Then  I strained and served over some crushed ice in a pretty glass. Pink grapefruit is an appealing shade and adds some natural sweetness.

Back in the 1970′s Gourmet suggested a similar cocktail with the addition of one tablespoon of dry vermouth.. If your grapefruit is tart, I prefer the added sweetness of  a tablespoon of Sarasota’s raw and unfiltered Farmmarket honey. This wildflower natural honey is called My Sweetest Honey.

If you are not a gin fan, you could substitute citrus or plain vodka, tequila or silver rum.

This week I tried something different for our neighborhood St. Patricks week celebrations. Since I live in Florida, I wanted something cool and refreshing for our pool party. Sailor Jerry dark amber rum is a favorite with my sail boating friends on both coasts. This cocktail dates back to the 1960′s. I read that was a favorite libation of John F. Kennedy, who loved sailing off the coast of Cape Cod.

Sailor Daiquiri

Ingredients:

1.5 ounces Sailor Jerry, the original spiced rum

1.5 ounces pineapple juice

.75 ounces lime sour

lime wheel for garnish

Method:

Pour all ingredients into a shaker with ice.

Strain mixture into a chilled martini glass.

Garnish with lime wheel.

Tips:

Go easy, as Sailor Jerry rum is 92 proof. You can use any spiced rum for this daiquiri.

If you serve Captain Morgan spiced rum, it becomes a Captain Daiquiri.
