Spiced Apple Crisp From Chef Anthony

.This recipe comes from Pritikin Longevity Center & Spa. Yes, I’ve also been there over a decade ago. When you travel and keep the schedule I do, taste the food and wine, it is important to remember healthy alternatives. These are great for all with apples in high supply.

Spiced Apple Crisp

Ingredients

  • 5 red Delicious or Fuji apples, peeled, cored, and cut into wedges
  • 1 tablespoon water
  • 2 teaspoons cornstarch
  • 1 teaspoon apple pie spice (such as McCormick brand — a simple blend of cinnamon, nutmeg and allspice)
  • Juice of ½ lemon (1 Tbs.)

Topping

  • ¼ cup crushed shredded wheat
  • Pinch of ground cinnamon

Methods/steps

1.  Combine apples, water, cornstarch, spice, and lemon juice in a medium mixing bowl.

2.  Mix well and place into a microwaveable container.

3.  Microwave on high for 10 minutes, or until apples are soft and juice is thick and clear.

4.  Divide among 4 dessert bowls.

5.  Top each serving with 1 tablespoon crushed shredded wheat and a sprinkle of cinnamon.

Traditional Guacamole from Fresh Start Health Retreat Center

Brenda and I both enjoy guacamole. In going to Fresh Start Health Retreat Center, I previously mentioned that I was checking out their recipes.

Only once before I have taken part in a regim that was as disciplined as this. I was happy with the results. As the time is drawing closer (November 4th), I’m eagerly anticipating what I’m going to experience. Having experienced a heavy September and October of traveling (Switzerland; Stowe, VT; Portland, ME; Jacksonville, FL; and Miami, FL), I’m looking forward to 5 nights in one place.

Their recipe for guacamole is good, I tried it. So, I may be in for more good treats than I was thinking. I’ll keep you up to date.

Traditional Guacamole (serves 7)

Special Equipment: food processor

Preparation Time: 20 min

Ingredients:

2 large tomatoes, diced

½  onion, diced

4 T fresh parsley, chopped

4 large very ripe avocadoes, peeled and pitted

1 t  unrefined sea salt

2  lemons, juiced

Pinch  nutritional yeast (optional)

Method

Chop tomato, onion and parsley and set aside. Blend rest of ingredients in food processor until smooth. Add the chopped onions and tomatoes, mix well. Decorate with parsley.

Enjoy! It’s difficult for me to stop with one serving of guacamole, but I will.

Zucchini Hummus from Fresh Start Health Retreat Center

As my trip is drawing closer to experiencing the Fresh Start Health Retreat Center on Vancouver Island, BC, I’m becoming more and more curious.  I requested that they provide some recipes so I could have an idea of what I would be eating besides juice.

I know we focus on all types of food in our travels. Some is healthy and others somewhat heavy on the caloric side. Periodically, I’ll be including a post with some healthy alternatives.

Ania Kastashchuk, owner/founder has sent me some to share.

As much as I enjoy all types of food, I do have to spend some time eating healthy.

Zucchini Hummus

*Preparation time here includes planning, dehydration, soaking, chilling and other “waiting time” Actual preparation usually does not take longer than 1 h for most dishes.


Special Equipment: Food Processor

Preparation Time: 30 min

Serves 5-7

Ingredients:

1 Zucchini

2 Sunflower seeds (unsoaked)

2 cloves of garlic, crushed

¼ cup Lemon juice

1-2 tsp Salt

½ cup Sesame Oil (Tahini)

Preparation:

Blend in food processor zucchini first, and tahini last: try avoid adding water (too liquid pate will make messy roll-ups)

For lettuce wraps: Put 1-2 Tbs into a leaf of Romaine or other large-leafed lettuce. Roll the leaves into wraps.

For tomato stacks: cut tomatoes into circles. Put one piece of tomato, top with zucchini hummus, then put another circle of tomato, top with pesto, decorate with greens or sprouts.

For Nori rolls: take 10 nori sheets (serves 8-10). Put a thin layer of zucchini hummus, a few slices of cucumber, avocado, radish, tomato or other vegetable (only 2 0r 3 kinds) along one side of the sheet, sprinkle some chopped dill and parsley, add some alfalfa sprouts, if on hand, and roll. Cut quickly with a serrated knife or big chef knife. If you wait, the nori will get soggy and you’ll never be able to cut it.
