As most of you realize by now, I will be attending the Kennepunkport Festival 2012 and quite excited about the event. I’m featuring profiles of the chefs who will be cooking at the Art of Dining Dinners as well as one of their favorite recipes.

Chef Kaldrovich brings a global influence to Sea Glass at Inn by the Sea. His career started at four-star Galani Restaurant at the Buenos Aires Park Hyatt Hotel. Mitchell moved on to the position of chef partie at Harpers 1 and 2 Restaurants in the prestigious Recoleta neighborhood before leaving Argentina to return to the U.S. He then held positions at L’Orangerie Restaurant in West Hollywood, California; the Duck Club Restaurant in Monterey, California; the La Palme D’Or at the Biltmore Hotel in Coral Gables, Florida; and the luxurious Llao Llao Hotel & Resort, back in South America in Patagonia. Before moving on to his current position at Sea Glass in Maine, Kaldrovich was Executive Chef of the famous Plump Jack Café in Squaw Valley, California.

Tastes…Kentucky Bourbon Vinaigrette

Since this week is the Kentucky Derby, I want to prepare something seasonal for our neighborhood celebration. The Derby lasts for only minutes,

but the pool party goes on for hours. My contribution is a salad. I found this spirited  bourbon dressing in the April issue of Southern Living Magazine. I will serve this vinaigrette over tender Kentucky Bibb lettuce leaves.This simple salad pairs well with traditional bourbon mint juleps. I hope someone brings a bourbon honey baked ham or minted lamb.

Kentucky Bourbon Vinaigrette

Ingredients:

1/3 cup apple cider vinegar

1 tbsp. light brown sugar

3 tbsp Kentucky bourbon

2 tsp Dijon mustard

3/4 tsp. salt

1/2 tsp freshly ground pepper

2/3 cup canola oil

Method:

Whisk together ingredients in a medium bowl.

Add canola oil in a slow steady stream, whisking constantly until smooth.

Wood Oven Fired Margarita Pizza

When Norm and I attend the Kennepunkport Festival,  June 5-9,  we will be staying at  Hidden Pond. We’re happy to say we will have the opportunity to visit Earth and experience Executive Chef Kevin Walsh’s cooking first hand. Kevin will be cookin  at An Evening at Earth – Saturday, June 9th. There will be so much talent that weekend, it will be fantastic.

Naturally, I’ll want to check out The Tree Sp;a. The entire atmosphere appears so serene and relaxing, it will provide a great contrast to our full afternoons and evening of art galleries, dining, and wine.
